Ingredients
1 package oven-ready (no-boil) lasagna noodles
2 cups (500 mL) tomato sauce
10 oz. (300 g) smooth ricotta
14 oz. (400 g) mozzarella cheese - shredded
1 medium onion - sliced, caramelized
3 Tbsp (45 mL) unsalted butter
Salt and Pepper as required
Method

Pre-heat the oven to 350 F. Remove Lou’s Sweet BBQ chicken out of the package and ensure that all of the chicken pieces are separate. Grate the mozzarella cheese. Caramelize the sliced onions in some oil (1 Tbsp) until light brown and season well with salt and pepper. Take a baking pan, 9 x 11 inch, and spread the butter out evenly on the bottom and sides of the dish. Place a layer of the oven-ready noodles in the bottom and then cover with ¼ of the BBQ chicken. Add 125 ml of tomato sauce. Add ¼ of the onions on top of the chicken followed by several teaspoons of the ricotta and then a good amount of the mozzarella. Season the layer with salt and pepper. Repeat process until the pan is full, finishing with a layer of cheese on the top. Loosely cover the lasagna with tin foil and bake for 45 minutes. Remove the foil and bake for a further 15 minutes to brown the top layer of cheese. Allow to rest for 10-15 minutes before cutting.
