Ingredients
4, 1/4" thick slices French loaf
4 tsp (20 mL) mayonnaise
4 thick slices Swiss Cheese
12 Baby Spinach leaves
4 tsp (20 mL) softened butter
Method

In a lightly greased fry pan over medium heat, cook Peameal until cooked through, turning once; set aside. Spread one side of each bread slice with 1 tsp mayo. Sandwich 2 slices of bread, mayo side in, with 2 slices of cheese, 6 spinach leaves and 1 slice of cooked Peameal; repeat for 2nd sandwich. Spread outside of sandwiches with softened butter, using 1 tsp per side. In a lightly greased fry pan over medium heat, cook sandwiches, turning once, until golden and cheese is melted. Serve immediately.
