Ingredients
2 English muffins, split, toasted, warm
4 poached eggs, warm
4 Tbsp. (60 mL) prepared hollandaise, warm
4 tsp finely chopped green onion
Chili flakes, to taste
Method

In a lightly greased fry pan over medium heat, cook Peameal until cooked through, turning once. Top each toasted English muffin half with 1 slice Peameal, 1 egg, 1 Tbsp hollandaise, 1 tsp green onion and a pinch of chili flakes. Serve immediately.

VARIATION: Sriracha Breakfast Sandwich - Substitute poached eggs with your favourite style of egg, omit hollandaise, and sandwich egg and Peameal between English muffin halves. Optional: add sliced cheese.
