2 cups mashed potatoes – fully cooked and ready to serve
6 oz. sweet corn
6 oz. sweet peas
1 small onion- diced and caramelized
1 oz. unsalted butter
Salt and pepper as required
Chopped parsley for garnish

Heat the mashed potatoes and have them hot and ready to serve. Heat 1 teaspoon of butter in a frying pan over medium heat and fry the onions until lightly golden. Heat the corn and peas, combine together with a teaspoon of butter and season with salt and pepper. Heat the Lou’s BBQ Chicken according to the instructions. Place 1 cup of mashed potatoes in a bowl. Top on one side with the peas and corn mixture . Take the Lou’s BBQ Chicken, divide in half, including the sauce and place on the other side of the mashed potatoes. Top all with the caramelized onions, and add a little chopped parsley for colour. Ready to enjoy!
