Baked Turkey Ziti

1 x 500 g package of Ziti Pasta
10-14 oz. (300 - 400 mL) tomato Sauce
4 oz. shredded mozzarella
7 oz. shredded parmensan cheese
1 red pepper - chopped, medium diced
1 medium Spanish onion - diced
2 Tbsp (30 mL) unsalted butter
Salt and pepper, to taste

Preheat oven to 350 F. Cook the pasta according to the package directions. Allow the pasta to cool after cooking and toss with a splash of olive oil. Remove turkey from package, reserving gravy. Dice turkey meat and add back to the gravy. Dice red pepper and onion and sauté in 1 Tbsp butter until lightly browned. Add diced turkey in gravy to the cooked pasta, along with peppers and onions. Toss well and adjust seasoning if necessary. Spread remaining butter into a 9 x 9 inch baking pan. Add a layer of the pasta mixture, then top with 100 mL of the tomato sauce and 100 g of shredded mozzarella. Repeat the layers finishing with a layer of cheese on top. Loosely cover with foil and bake for 45-60 minutes. Allow to cool for 10 minutes before serving.
