Ingredients
2 large baking potatoess
2 green onions – diced
1 small tomato – diced
2 Tbsp butter
2 Tbsp sour cream
Salt and pepper as needed
Method

Preheat the oven to 400 F. Wrap the potatoes in tin foil and pierce several times with a fork. Bake for 35-45 minutes until the potato is soft and “gives” slightly when squeezed. Remove from the oven and keep warm. Heat Lou’s Pulled Turkey according to package directions. Dice the green onions and tomatoes. Slice the potato down the middle and scoop out the inside, leaving the sides intact. Whip with removed potato flesh with butter and season with salt and pepper. Place the whipped potato back into the potato skin and top with the heated pulled turkey, adding as much of the BBQ sauce as desired. Top with diced green onions, chopped tomato and a dollop of the sour cream. Serve hot.
