500 g Penne noodles – cooked according to the packaging instructions
2 Tbsp (30 mL) olive oil
1 cup (250 mL) 35% cream
1 small onion – diced
4 oz. (115 g) frozen peas – defrosted
2 - 4 oz. dry white wine – the one in your glass
Salt and pepper as needed
Grated parmesan cheese as needed

In a large sauce pot, heat the oil over medium high heat. Add the onions and sauté until they begin to brown on the edges. Add the white wine and allow to reduce for 1 minute. Add the diced turkey, gravy and the peas. Stir to combine well and heat for 1 minute. Add the cream and allow to come to the boil and then turn the heat off. Add the cooked penne. If the dish is a little too thick, add some of the water the pasta was cooked in to thin out. Mix the ingredients well and adjust the seasoning. Serve topped with some grated Parmesan cheese.
