BBQ Chicken Wrap

4 x 10 inch wraps – white or whole wheat
1 cup (250 mL) cooked rice – lightly seasoned with salt, pepper, cumin and chili powder
1 cup (250 mL) cooked black beans
4 oz. (115 g) shredded cheese
4 oz. (115 g) chopped tomato

Place 1 tortilla wrap on a cutting board. Place ¼ cup of rice in the centre of each wrap, followed by ¼ cup of the beans. Place 100 grams (3.5 oz.) of Lou’s BBQ Chicken on top of the beans followed by 1 oz. EACH cheese and tomatoes. Fold the right and left sides of the wrap into the middle. Fold the side facing you over the top of the two folded in sides and roll into a tube. Set aside. Repeat with remaining tortillas and filling. Place the wraps, seam side down, into a hot frying pan for 2 minutes and then roll over to heat the other side for an additional 2 minutes. Serve hot.
