Ingredients
1 tsp (5 mL) vegetable oil
8 eggs - poached to desired degree of doneness, kept warm
1 package (400 g) Lou's Shredded BBQ Turkey
4 English muffins – cut in half, toasted and buttered
4 slices of medium cheddar
Method

In fry pan over medium-high heat, sauté onion in oil until lightly browned. Set aside. Heat Lou’s Shredded Turkey according to package directions and keep warm. Poach 8 eggs to desired degree of doneness. Place 1 slice of cheddar on the cut side of each halved, prepared, English muffin. Top each with some of the shredded turkey, dividing it equally. Top each with a poached egg and some fried onions, dividing onions equally. Drizzle each with a splash of hot sauce, if desired, and serve.
