BBQ Chicken with Rice and Beans

2 servings Instant rice – your brand preference – prepared according to the directions
1 can red kidney beans – drained
1 tsp (5 mL) chopped parsley
Salt and pepper as required

Prepare rice according to package directions and keep warm. Drain kidney beans and heat in microwave for 90 seconds or until hot. Add hot beans to rice and keep warm. Prepare Lou’s BBQ Chicken according to package directions. Divide rice and bean mixture on to 2 plates and top each with BBQ Chicken, dividing equally. Garnish with chopped parsley, season to taste and serve hot.
