Teriyaki Chicken with Noodles

1 package (454 gr) Chinese noodles – the ramen kind
2 medium carrots (200 gr) - peeled, sliced on the bias
1 medium Spanish onion – peeled and cut julienne
1 green pepper – cored and chopped in medium dice
1 yellow pepper – cored and chopped in medium dice
12-16 green beans – ends removed and small diced
2 green onions – sliced on bias thinly
2 oz. (60 ml.) Olive oil - more if needed during the cooking
1 oz. (30ml) Soy Sauce

Clean and prepare all of the vegetables and set aside. In a large frying pan, add the olive oil and heat over medium high heat. Add the onions and carrots and cook until they begin to turn translucent. Add the peppers and continue to sauté. Add the green beans and toss, cooking for 1 minute. Add the teriyaki chicken and the sauce and toss well, heating the sauce through and allowing the chicken to come up to temperature. Prepare the noodles according to the instructions and divide into 4 bowls. Add the soy sauce, combine well and then pour the teriyaki chicken over the noodles and top with the sliced green onions. Serve Hot.
