Ingredients
8 oz. (225 gr) sliced onions - caramelized
8 oz. (225 gr) red peppers, julienne slice - sautéed
8 oz. (225 gr) Tex mex cheese mix
4 soft rolls – 6 inch
2 oz. (60ml) olive oil
Method

Pre heat the oven to 350 F. In a frying pan, heat the olive oil over high heat for 1 minute and add the onions, and allow these to cook for 3-4 minutes on high and then turn down medium heat, and then the peppers. Allow these 2 vegetables to combine and continue cooking for 1-2 minutes. Remove the brisket from the package, and add all of the contents, the beef and the barbeque sauce to the onions and pepper. Toss well and allow cooking for another 1- 2 minutes, to heat the beef through. Divide the brisket and vegetables into the 4 buns, and add 2 oz. of the shredded cheese on top of each. Place on a baking sheet and into the oven for 3-5 minutes until the cheese is melted. Serve hot from the oven.
